Does the Gm2 require a six-string guitar, in standard (EADGBE) tuning, or can it be used with open tunings and/or 4-string instruments like e.g. a baritone ukulele?

The G2M doesn't require any specific tuning. The tuning is only for the built-in tuner (it can't tune to other notes than these). But for MIDI conversion, it can work with any notes. So there should be no problems with a baritone ukulele.
