Is there a new MIDI Implementation chart for the V3?
The links on your Docs and Downloads pages are still for the V2. I read that and it showed there were no CCs sent other than all notes off, and no aftertouch, which made me think the G2M wouldn't be all that useful to me. From reading your forum, and a bit of the FAQs, I now see that's not the case.
By still showing the old chart, you may be putting people off buying it.
I realise much of it will be the same, but the differences are important. It doesn't have to be a whole new PDF, if that's hard to organise. A simple text file, even just an addendum to the old chart, would be fine.
Although I'm now satisfied the G2M V3 will do what I want, I'm still wondering if there's more information that I could learn from a proper MIDI spec chart.

Shouldn't there be another CC or two in the Control Change Transmit box though? I was under the impression it sends Breath (CC 2).
I just got one today, and had a brief play with it this morning. It's very entertaining. I'll look at the output with MIDI-OX later.
I tried it with my Roland XV-3080 (and a small guitar), with some patches set up for my wind controllers and a couple of the built in keyboard oriented ones. It would need patches tailoring to it a bit more but it was a good start.
